Guar gum is a galactomannan. Guar gum is similar in composition to Locust Bean Gum, however it is capable of creating a viscous colloidal solution in cold water. Excessive heat can degrade the gum, so it is best to use guar gum in the temperature range of 25 – 40 °C for optimal viscosity.
